You can make a Japanese sake out of fermented rice. It is called Nihonshu in Japan which means Japanese alcohol. Japanese sake has become increasingly popular together with the other cultures of Japan. This is because it has a rich history with stories of pride and ceremony.

In order to make a Japanese sake, you need a clean good water source, rice, koji mold, and some yeast to ferment. The general alcohol content of Japanese sakes is about 15 percent and sometimes even as high as 17 percent.

As to the history of sake, there are no clean records that will provide detailed information about it. However, many believe that it was when rice agriculture became popular in Japan. There are many other stories about how it came to be.

Back in the 500 B.C. ancient China, the Chinese people chewed up rice and nuts and then spit the contents of their mouths into a giant tub. Then the covered saliva with added ingredients would become a fermented sake in time.

Going back to Japan, during the 710 to 794 which is also known as the Nara period, Koji was discovered. This discovery changed the way of how sake was being made. It only needs to be added in order to ferment the rice. Because of how effective it is, koji is still being used today.

The production and manufacture of sake was originally the responsibility of the Japanese government. Soon after, the production of sakes was done by the Japanese temples and shrines. Then in the late 1800s, everyone was authorized to make sake. This increased the number of people producing and selling sake in Japan. However, due to the huge tax payments, only the biggest companies succeeded in it. Today, homebrewing of sake is not allowed without a license. Futhermore, considering that the Japanese were familiar with eating rice, they started adding alcohol to their sake.
